chickens roasting away in the oven,
one for dinner, one for leftovers and
the carcasses for a hearty winter soup.
Many wines — white and red — will
work with roast chicken, but I’m
invariably guided by memories of a
year in France and the irresistible
spit-roasted chicken from the Sunday
market, washed down with a glass or
two of Côtes du Rhône.
If you enjoy a steaming bowl of
chili in the cold months, try an
Argentinian Malbec, a Californian
Zinfandel or the Italian equivalent,
Primitivo. The latter two, with a nice
spiciness, good weight and foodfriendly
acidity, also work well with
flavoursome, lentil-based, slightly
spicy vegetarian dishes. Roast pork
often pairs well with a Merlot-based
wine, but also works with a myriad of
richer whites — Chardonnay, Chenin
Blanc from the Loire, Alsace Pinot
Gris or an Australian Viognier.
So with gas prices skyrocketing
and time always at a premium, give
some thought to your culinary preferences
and stock up on a selection of
wines. And while you’re at the LCBO
or taking a fall tour of Ontario wineries,
pick up some dessert wines.
Prince Edward County Ice Cider is
terrific with tarte tatin. (While you’re
there, pick up some Feral Cider and
cook pork in it. Delicious!) A sweet
Oloroso or Walnut Brown sherry is
magnificent with pecan pie. Try some
Banyuls from southern France with
chocolate desserts. Muscat de
Beaumes de Venise is fabulous with
tarte aux pommes, tiramisu and many
cheeses.
I’m getting hungry. Bring on
winter!

Due West is, in my opinion, the best yet. Perhaps it is because I am a bit
more interested in one particular article than others. “Marvellous Manotick”
(Due West/Due East, Spring 2007) is very well written; Barbara Bottreill did her
homework. I am a volunteer at the Mill and a member of the A.Y. Jackson Park
Committee so have more than a passing knowledge of both places in Manotick.
It is obvious to me that the BIA and Watson’s Mill have had a good deal of
input into the Manotick section of the magazine. Congratulations on a fine
publication.
