Fern Walker lives in Carleton Place, Ontario and is the author of Basically
Blue:A collection of Blueberry Recipes. She does promotional work for the
Blueberry Producers Association of Nova Scotia and the Wild Blueberry
Association of North America. In 1983, she started Fern’s Frozen Fruit,
supplying blueberries, cranberries and raspberries to non-profit groups
for fundraising.

Blueberry Coffeecake
4 eggs, separated
(1 3/4 cups) 400 ml white sugar
(1 cup) 250 ml oil
(1 tbsp) 5 ml vanilla
2 lemons, juice and grated rind
(2 1/2 cups) 600 ml all-purpose flour
(2 tsp) 10 ml baking powder
(2 cups) 500 ml blueberries, floured
Preheat oven to 350°F (180°C). Beat
egg whites until foamy. Add sugar, egg
yolks, oil, vanilla, lemon juice and lemon
rind. Fold in dry ingredients and berries,
reserving a few berries for bottom of pan.
Pour into an 8 cup (2 L) dish and bake for
one hour.
